Ingredients
- Cooking spray
- 4 cups shredded cooked chicken (poached, grilled, roasted or rotisserie chicken)
- 1 cup light sour cream
- 2 cups shredded pepper Jack cheese, divided use
- 8 fajita-size (6-inch) flour tortillas (regular or whole wheat)
- 1 cup prepared salsa, mild, medium or hot

Step 1
Preheat the oven to 375 degrees. Coat a shallow baking dish with cooking spray. In a large bowl, combine the chicken, sour cream and 1 cup cheese. Mix well.
Arrange tortillas on a flat surface. Spoon chicken mixture onto the center of each tortilla. Roll tortillas and place in the bottom of the prepared pan. Spoon salsa over the tortillas and top with remaining cheese. Bake for 20 minutes, until cheese is bubbly.
Makes 8 servings.
