Ingredients
- 1/3 cup cooking oil
- 1 garlic clove, quartered
- 1 egg
- 2 tbsp cider vinegar
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tsp anchovy paste
- 1/2 cup parmesan cheese
- SALAD
- 1 romaine lettuce, mediuim head
- 1 lettuce, small head
- 2 cups croutons

Preparation
Step 1
DRESSING: Combine oil and garlic. Let stand overnight or at least a few hours. Remove garlic. Either discard or chop it finely to add a stronger garlic flavor.
Add remaining ingredients to oil in bowl. Whisk together well. Makes about 1 cup.
SALAD: Tear greens into bite size pieces into large bowl. Add croutons and dressing. Toss well.
