Ingredients
- 1 1/3 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3 tbsp sugar
- 1 egg
- 1 1/4 cups buttermilk
- Scant 1/4 cup oil
- 1/2 tsp vanilla
- 1 tsp baking soda, dissolved in 1 tsp warm water

Preparation
Step 1
Mix dry ingredients. Beat egg thoroughly, add milk, oil and vanilla. Add the baking soda mixture to liquid ingredients and mix until slightly lumpy.
For regular pancakes, use milk and 3 tsp baking powder. Delete baking soda mixture. Cook at 375-400F until bubbles break the surface. Turn and cook until both sides are lightly brown.
