Ingredients
- 1/4 lb butter, at room temperature
- 3/4 cup pine nuts
- 1 cup flour
- 1/2 lb blue cheese or gorgonzola, fine crumbled

Preparation
Step 1
Combine butter and cheese in food processor. Blend until creamy. Add flour and pine nuts. Mix gently. Form into 2, 1 1/2" diameter logs. Wrap in wax paper and chill until firm (or overnight).
Preheat oven to 375F. Slice chilled dough into 1/8 inch rounds. Place on cold, lightly greased baking sheets. Bake until golden brown (approximately 10 minutes). Immediately remove from baking sheets and cool on wire rack. Store in air tight container.
