Mexican Pork Chops

Ingredients
- 8 pork chops
- 3 Tbsp oil
- 3 cup water
- 2 cup brown rice
- 16 oz tomato sauce (or salsa)
- 4 Tbsp taco seasoning
- 4 oz green chilies, chopped
- 2 cup cheddar cheese

Preparation
Step 1
1. In a sprayed 10x15 baking dish, combine the water & rice. (If possible, do this early in the day, cover and soak all day.)
2. Add tomato sauce/salsa, and taco seasoning; mix well.
3. Brown the pork chops in a large skillet with the oil. Sprinkle them with salt and pepper.
4. Arrange the browned chops over the rice and top with green chilies.
5. Cover and bake at 350 for 1 hour. Top with cheese and bake uncovered on additional 15 minutes.
6. Remove from oven. Let sit 15 minutes before serving (so excess liquid is absorbed)
