FISH****Salmon Rillettes

12/13 - Great for both. Makes a really nice lunch or hors d'ouvre served on a cracker, Ryvita (or toasted baguette) with a dab of creme fraiche and a sprig of fresh dill if you're being fancy.

- 6 servings
- I used leftover poached salmon steak from Tarini's. If you are starting with a fresh piece of salmon, see the recipe for poaching instructions.
- 1/2 lb. salmon, flaked
- 1 small pkg. of smoked salmon (from Costco) about 70 grams?
- white pepper
- pimente d'espelette
- zest and juice of 1 lemon
- 3 tbsp. unsalted butter, cubed, at room temperature
- 1/4 tsp. pink peppercorns, crushed
- OPTIONAL: Whipped cream cheese as required to lighten mixture up for piping, if desired

Preparation
Step 1
With the back of a fork or a firm spatula, lightly mash the poached salmon. Add the smoked salmon, finely minced, the zest of 1 lemon, a pinch of piment d'espelette or smoked paprika or cayenne (original recipe calls for a minced small red chile, which I never have on hand), the shallots or green onion and salt and white pepper to taste and stir well.
Add the butter and continue to stir and mash until it is well incorporated and you have a thick spread. Add the juice of half the lemon and mix well. Taste and adjust salt and white pepper to taste, adding extra lemon, if desired. Finally, stir in the crushed pink peppercorns.
Pack into a 1 cup mason crock (it just about fits, with about 1/4 cup leftover) and chill for at least two hours to firm up. Remove from the fridge about 15 minutes before using, for ease of spreading, unless you're putting it on hot toast.
Serve garnished with a small dab of creme fraiche, maldon salt and a bit of dill for me.
