Ingredients
- 2 t olive oli
- 8 oz white or cremini mushrooms, finely chopped
- 1 medium onion, finely chopped
- 1 small bell pepper, finely chopped
- 1 large celery stalk, finely chopped
- 1 large carrot, peeled and finely chopped
- 3 (o rmore or less) garlic cloves, minced or pressed
- 1 1/2 t dried oregano
- 1 1/4 pounds ground turkey
- 1/4 c + 2 T ketchup
- 1 1/2 T red wine vinegar
- 1 1/2 T Worcestershire sauce
- 12 oz tomato sauce
- Salt and pepper
- 8 whole wheat hamburger buns

Step 1
Heat the olive oil in a large skillet over medium-high heat until shimmering. Add mushrooms, onion, bell pepper, carrot, celery, and 1/2 t kosher salt. Reduce heat to medium-low, cover and cook until vegetables are soft, about 10 minutes. Add the garlic and oregano, and saute until fragrant, about 30 seconds. Add the turkey, and cook, breaking up the meat, until no longer pink, about 8 minutes
Mix ketchup, vinegar, Worcestershire sauce, and tomato sauce in a small bowl. Add to the skillet and bring to a boil. Reduce the heat to medium-low, and simmer for 20 minutes, stirring occasionally. Season with salt and pepper to taste.
