Ingredients
- 2 C flour
- 1/4 tsp salt
- 2 large eggs
- 1 3/4 C milk
- 1 T unslated buter, melted
- 1/4 C finely chopped fresh dill
- 1/4 C finely chopped fresh flat-leaf parsley

Preparation
Step 1
Preheat the oven to 450 and oil eight 8oz pyrex custard cups or special popover pans.
Mix the flour and salt in a bowl. In a separate bowl, beat the eggs until frothy, add the milk and melted butter, and continue to beat vigorously.
Slowly add teh egg and milk mixture and chopped herbs to the dry ingredients, stirring gently until well blended. Be careful not to overmix. Pour batter into custard cups, half-filling them, and place on a baking sheet.
Bake at 450 for 20 minutes, then reduce heat to 325 and continue baking for another 15 minutes.
Serve immediately.
