Ingredients

  • 1 lb stew meat or London Broil cut into cubes. Cut them the size you want to eat later.
  • 2 large carrots peeled and cut into pieces
  • 4 large potatoes peeled and cut into large cubes
  • Flour
  • Salt
  • Pepper

Preparation

Step 1

Put beef cubes in a plastic bag and add flour, salt and pepper. Shake to coat all over.
Heat a couple tablespoons of oil in a large sauce pan. Add floured meat cubes and brown stirring to brown all over. Add water to cover all the meat. Bring to a boil and then simmer about an hour or until beef is tender. Add potatoes and carrots and a cup of water. Cook until soft about ¾ hour. When done I like to thicken the liquid by mixing a few tablespoons of corn starch in a cup with cold water. Mix it so it’s thin like milk then add a few spoons of the hot liquid into the cornstarch and water to warm it up. Add the cornstarch mixture back to the pan by drizzling it in while you stir constantly. Continue to simmer and it will thicken in a few moments.

This was a favorite of Grandma Madelyn and my father. You guys liked it too and we used to butter some Italian bread and dip it in the sauce.
