- 5 lbs roasting chicken
- 5 cups family stuffing

Step 1
Tie wings with string to hold close to body. Pack stuffing lightly into neck and body cavities. Skewer skin together to hold in stuffing. Tie legs to tail. Place in roaster. Cover. Roast in 400 oven for 20 minutes. Reduce heat. Roast in 325 oven for 2 1/2 to 3 hours. Meat thermoneter should read 190. Leg joints should move easily. Remove cover last few minutes to brown. If you prefer to cook uncovered brush skin with softened butter and baste several times during cooking.
