Ingredients

  • Crust: 1 cup butter, softened

  • 1/2

    cup of sugar

  • 1

    egg

  • 1

    tsp vanilla

  • 2

    cups sifted flour

  • Filling: 2 eggs

  • 1/2

    cup sugar

  • 1

    can of almond paste

  • 1/2

    tsp almond extract

Directions

Crust: Mix together 1 cup of butter and 1/2 cup of sugar. When fluffy, beat in 1 egg and 1tsp vanilla. Then stir in 2 cups flour. Press into small muffin tins or traditional sandekake tins. Filling: Beat 2 eggs until foamy. Add 1/2 cup sugar, almond paste (crumble first) and almond flavor. Spoon into tins over crust. Bake at 325 for approximately 15 minutes or until the filling is barely golden brown.
