Ingredients
- 2 cups all purpose flour
- 3/4 cup brown sugar, packed
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 large egg
- 1 1/2 cups mashed overripe banana (about 3 medium)
- 1/2 cup milk
- 1/3 cup butter, melted
- 1 tsp vanilla
- 12 banana chips

Preparation
Step 1
Measure first 5 ingredients into large bowl. Stir. Make a well in centre.
Combine next 5 ingredients in medium bowl. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.
Press banana chips on top of batter. Bake in 375 oven for 20 to 22 minutes until wooden pick inserted in centre of muffin comes out clean.
