Ingredients

  • 3 T corn starch
  • 3 eggs, separated
  • 1 1/4 c sugar
  • 1 1/2 c boiling water
  • 1/4 c lemon juice
  • 9 ” baked pie shell
  • 1 T grated lemon ring
  • 6 T sugar

Preparation

Step 1

Combine corn starch, 1 ¼ c sugar, lemon juice, and lemon rind. Beat egg yolks; add to corn starch mixture. Gradually add boiling water. Heat to boiling and boil gently 4 minutes. Pour into pie shell. Beat egg white until stiff. Gradually beat in 6 T sugar. Spread over pie. Bake 425, 4-5 minutes.
