Ingredients
- 1 stick of butter
- 1 1/2 cups sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/8 tsp salt
- 1/4 cup buttermilk
- 2 large mashed bananas
- 1 cup chopped pecans (optional)

Preparation
Step 1
Preheat oven to 350 F. In a large mixing bowl, cream butter and sugar; add vanilla and eggs. Beat until light and fluffy. In a small bowl, sift together four, baking soda, and salt. Add to creamed mixture. Add buttermilk and bananas and stir only until ingredients are mixed. Add pecans. Spoon mixture into well greased muffin tins. Bake muffins for 18-20 minutes.
