Ingredients
- Metric Ingredient Imperial
- 20 ml olive oil 1 1/2 tbsp
- 1 onion, chopped 1
- 1 garlic clove, minced 1
- 1 L fresh spinach, chopped 4 cup
- 40 ml lemon juice 3 tbsp
- 1 L long grain rice, cooked 4 cup
- 30 ml basil, minced 2 tbsp
- salt & pepper to taste -
- 50 ml feta cheese, crumbled 1/4 cup

Preparation
Step 1
Heat oil in a heavy skillet or wok. Add onion and garlic and cook on medium-high until onion is softened and transparent. Add spinach, lemon juice and rice; cook stirring frequently until spinach is limp and rice is throughly heated. Toss in basil. Add salt and pepper to taste. Place in serving bowl and sprinkle with feta cheese.
