  • 1 1/2 c graham cracker crumbs
  • 2 T sugar
  • 1/4 c butter, melted

Preparation

Step 1

Cookie crust: 1 c flour ¼ c butter, melted
½ tsp baking powder 3 T sugar
1 egg ¼ tsp salt
Wrap 9” springform in aluminum foil. Spray with cooking spray. Line pan with parchment paper and spray paper.
Press crust into pan. Chill 30 minutes.
Filling: 4 8 oz cc 2 c sugar
3 T flour 2 tsp lemon peel
4 egg yolks 2 tsp vanilla
½ c sour cream
Beam cream cheese and sugar. Add flour, lemon peel and egg yolks. Add sour cream and vanilla. Pour into pan and sprinkle with cinnamon. 325, 1 ½ hours. Put pan under water.
Pineapple version: add 1 c pineapple, ½ c sugar and 4 T tapioca – simmer until tapioca thickens.
