Ingredients
- 1 lb frozen hash brown potatoes, thawed
- 2 Tbsp butter, melted
- 1/2 cup tomato, diced
- 1/2 cup each red and green pepper, diced
- 1/2 cup Cheddar cheese, shredded
- 4 eggs, beaten
- 1 tsp black pepper
- 1/2 cup bacon, cooked & crumbled
- Nonstick cooking spray

Preparation
Step 1
Preheat oven to 400 deg. Spray 2 mini-muffin tins with cooking spray. Spread thawed potatoes on paper towels to absorb excess water. Mix potatoes with melted butter and scoop 2 Tbsp into each cup. Pack mixture against sides. Bake for 20 minutes, or until golden brown. Remove and cool. Place the tomatoes, peppers and cheese into cooled hash brown cups. Mix eggs and pepper and pour evenly over ingredients in each cup. Bake at 325 deg for 10 to 15 minutes until eggs are firm. Remove from muffin tins and top with crumbled bacon.
