Pear and Blue Cheese Salad

Ingredients
- Salad:
- 8 c. mixed salad greens
- 2 fresh pears
- 2 tbsp. lemon juice
- Dressing:
- 1/3 c. canola oil
- 3 tbsp. raspberry vinegar
- 1 tbsp. chopped shallots
- 3/4 tsp. granulated sugar
- 1/2 tsp. kosher salt
- 1/8 tsp. freshly ground black pepper
- Garnish:
- 4 oz. (about 1 c.) crumbled blue cheese
- 3/4 c. walnuts, glazed with
- 1 tbsp. honey

Step 1
Glaze walnuts: Place 1 tablespoon honey in a small skillet. Add walnuts; cook and stir over low heat until nuts are slightly browned and completely glazed. Remove from heat and carefully (they are way hot!) transfer nuts to a glass plate to cool.
For dressing, combine oil, vinegar, shallots, sugar, salt, and pepper in a small bowl. Whisk to mix well.
To finish salad, dice (or slice) the pears; mix with lemon juice to prevent browning. Place salad greens on individual salad plates. Top with pears, glazed walnuts, and blue cheese crumbles. Drizzle with dressing. As an alternate serving method, place salad greens in a large serving bowl with pears and walnuts. Add the dressing and toss lightly. Top with blue cheese crumbles; serve immediately.
