Granola - Pumpkin Spice

Ingredients
- 4 4 4 cups rolled oats
- 1 1/2 1 1/2 1/2 tsp. pumpkin pie spice
- 1 1/2 1 1/2 1/2 tsp. cinnamon
- 1/4 1/4 1/4 tsp. nutmeg
- 3/4 3/4 3/4 tsp. salt
- 3/4 3/4 3/4 cup brown sugar
- 1/2 1/2 1/2 cup pumpkin puree
- 1/4 1/4 1/4 cup applesauce
- 1 1 1 egg white
- 1 1 1 tsp. vanilla extract
- 1/2 1/2 1/2 cup dried cranberries
- 1/2 1/2 1/2 cup pepitas

Preparation
Step 1
Preheat the oven to 325°F and line a large baking sheet with parchment paper.
In a large bowl, combine oats, spices, and salt.
In a medium bowl, whisk together brown sugar, pumpkin puree, applesauce, egg white and vanilla extract until very smooth. Pour wet ingredients into oat mixture and stir until the oats are evenly coated.
Spread on prepared baking sheet in an even layer.
Bake for 20 minutes. Remove pan from the oven and turn over the granola with a spatula. Bake for an additional 15 minutes or until the granola is golden and crisp. Remove from the oven and stir in dried cranberries and pepitas. Cool on pan and break up granola as desired. Store in an airtight container.
