Ingredients
- 1 tbsp. olive oil
- 1 1/2 c. red onions, cut in strips
- 2 large cloves garlic, minced
- 1 lb. spiced sausage, crumbled
- 1 lb. Penne pasta
- 1 c. dry white wine
- 2 large fresh tomatoes, cored and chopped
- 1 c. zucchini, cut in 1/4-inch slices
- 1/2 c. basil leaves, snipped in small pieces
- kosher salt
- freshly ground black pepper
- freshly grated Parmesan cheese

Step 1
Cook pasta according to directions on the package.
Heat olive oil in large skillet over medium heat. Add onion; cook and stir 3 minutes. Stir in garlic and crumbled sausage; cook about 8 minutes or until sausage is no longer pink; drain. Add wine to skillet and cook to reduce volume by half. Stir in tomatoes; cook 5 minutes until the tomatoes soften and blend. Add zucchini slices; cook 1 additional minute.
Just before serving, stir in basil. Taste, and season with salt and pepper. (The amount will depend on the type of sausage used). Drain pasta; top with sauce, and serve. Garnish with Parmesan cheese.
