- Fish
- Salt
- Cider vinegar
- Pickling spices
- Sliced Onions
- Sugar
- Distilled white vinegar

Step 1
After clearing the fish and cutting most of the red strip out of the sides cut up in pieces. Use 5/8 cup of salt for each quart of fish, cover with cider vinegar and stir. Let stand 5 or 6 day in cool place or refrigerate. Drain and rinse in cold water and let stand 1/2 hr.
Fill each quart jar by placing a layer of fish and a layer of sliced onions and mix in a tbsp. of mixed pickling spices. Then cover with the following and seal.
1 c. sugar and 2 c. distilled white vinegar. Put this in cold. Let stand for 7 days or longer and they are ready to eat. Other fish may be fixed this way
