Ingredients
- 1/2 c sugar
- 2 T cornstarch
- 1/4 t salt
- 1/2 c oj
- 1 T grated lemon rind
- 1/4 c lemon juice
- 1 T margarine
- 3/4 c margarine
- 1 c sugar
- 1 egg, well beaten
- 1 1/2 t vanilla
- 2 1/2 c sifted flour
- 3/4 t baking powder
- 1/4 t salt

Preparation
Step 1
Combine 1/2 c sugar, cornstarch, salt, oj, lemon rind, lemon juice & 1 T margarine in saucepan. Bring to rolling boil & boil 1 min, stir constantly. Chill thoroughly before using. Cream together margarine & sugar until light and fluffy; add egg and vanilla and blend well. Sift together flour, baking powder and salt; add to creamed mix and blend well. chill dough. Roll out on lightly-floured board 1/8" thick; cut with fluted cookie cutter. Place a spoonful of lemon filling one each half the cookie. Cut 2 gshes in other round and place over filling. Gently lift points so filling will show. Press edges together with fork. place on greased baking sheet and bake 375* 8-10 min.
