Ingredients

  • Frosting:
  • 3 cups flour
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 eggs, well beaten
  • 1 1.4 cup salad oil
  • 1 1/2 tsp vanilla
  • 1 8 oz. can crushed pineapple,undrained
  • 3/4 cup pecans
  • 1/4 cup black walnuts
  • 2 cups chopped bananas
  • 2 8 oz. pkgs. cream cheese, softened
  • 1 cup butter,at room temperature
  • 2 16 oz pkgs. powdered sugar
  • 2 tsp. vanilla
  • 1 cup chopped pecans

Step 1

Combine all dry ingredients in a large mixing bowl. Add eggs and salad oil stirring until moistened. Do not beat with mixer. Stir in vanilla, pineapple and nuts. Add bananas. Spoon batter into 3 well greased and floured 9 inch round cake pans. Bake in preheated 350 degree oven for 25-30 minutes. Turn onto cooling rack. Cool completely before frosting.

For frosting: Combine cream cheese and butter. Cream until smooth. Add powdered sugar, beating with an electric mixer until light and fluffy. Stir in vanilla. Frost the tops of all 3 layers. Carefully draw a circle on the top layer with a toothpick and fill in the circle with chopped pecans.
