Ingredients
- Optional:
- 1 1/2 C sugar
- 1/2 C butter
- 2 eggs
- 1 1/2 C ripe mashed bananas, about 3 or 4 medium
- 1 tsp vanilla
- 1/2 buttermilk
- 2 1/2 C sifted flour
- 1 tsp baking soda
- 1/2 chopped walnuts
- 1 C fresh or frozen (thawed and drained) blueberries
- Can add a mixture of cinnamon and sugar on tops of breads before cookine
- OR
- dust each cooked bread with sifted powdered sugar

Step 1
Heat oven to 375.
Grease each bread pan
In large bowl, stir sugar, butter, eggs, bananas, vanilla and buttermilk until mixed. Stir in flour, baking soda, and salt JUST UNTIL MOISTENED. If mixed too much, it become doughy and soggy.
Stir in blueberries and walnuts. Pour into pans... about 1/2 cup for each mini bread pan.
Bake for about 30 minutes or until golden brown and knife inserted in middle comes out clean. Cool five minutes on a wire rack and loosen sides of pan.
Cool completely for about two hours before slicing. Wrap tightly and store at room temperature for up to four days or refrigerate up to ten days.
