Ingredients

  • 4 lb. 3-4 inch cucumbers
  • 1 quart white vinegar
  • 1/2 c. sugar
  • 3 tbsp. salt
  • 1 tbsp. mustard seed
  • 3 c. sugar
  • 1 2/3 c. white vinegar
  • 1 tbsp. whole allspice
  • 2 1/4 tsp. celery seed

Step 1

Wash cucumbers – cut crosswise into 1/4 inch slices. Combine 1 qt. vinegar 1/2 c. sugar, salt, mustard seed in saucepan. Cover and simmer 5-7 minutes till cucumbers change from a bright to dull green.

Brine:
Combine 3 c. sugar, 1 2/3 c. vinegar, allspice and celery seed in another pan and heat to boiling point.

Drain cucumber - pack in hot clean jars, cover with brine to within 1/2-inch of the top. Make sure vinegar brine covers cucumbers. Cap each jar at once. Process 5 min in hot water bath.

Makes 4-5 pints
