  • 2 cups flour
  • 12/3 cups sugar
  • 2/3 cup unsweetened cocoa
  • 1 tsp vanilla
  • 11/4 tsp baking soda
  • 1/4 tsp baking powder
  • 3 eggs
  • 11/3 cups water
  • 1 cup mayonnaise
  • Frosting
  • 1 stick (1/2 cup) butter or margarine
  • 2/3 cup cocoa
  • 3 cups icing sugar
  • 1/3 cup milk
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven to 350
Grease and flour bottoms of 2 9" round pans
In a medium bowl, combine flour, cocoa, soda and powder.
In a large bowl, with mixer at high speed, beat eggs, sugar, & vanilla, scraping sides occasionally for 3 min or until smooth & creamy. Reduce speed to low beat in mayonnaise till well blended. Add flour mixture in 4 additions alternately with water beginning and ending with flour
Pour into pans
Bake 30-35 min. Cool in pans on wire rack for 10 min
Remove from pans Cool completely on rack
Frosting
Melt butter. Stir in cocoa. Alternately add icing sugar and milk. Use more milk if needed. Add vanilla and blend well
