Ingredients
- 1 tbsp. butter
- 2 c. whipping cream
- 10 oz. boursin cheese
- 3 lbs. medium red potatoes, thinly sliced
- 1 tsp. salt
- 1 tsp. freshly ground pepper

Step 1
Coat the bottom and sides of a 9xl3-inch baking dish with the butter. Heat the whipping cream and cheese in a saucepan over medium heat until blended, stirring frequently. Remove from the heat.
Layer the potatoes, salt, pepper and cheese sauce 1/2 at a time in the prepared baking dish, arranging the potato slices so they are slightly overlapping. Bake, covered, at 400 degrees for 30 minutes; remove the cover. Bake for 30 minutes longer.
