  • 1 cup butter-softened
  • 1 cup brown sugar- packed
  • 2 egg yolks slightly beaten
  • 2 cups sifted flour
  • 2 egg whites
  • 1 cup shredded coconut
  • jam (I like strawberry or raspberry)

Step 1

Preheat oven to 350 degrees F. Spray baking pan with cooking spray. Place coconut in a small bowl.
Cream butter and sugar. Separate eggs whites into a small bowl. Add egg yolks to butter and sugar mixture and mix until combined. Stir in flour until dough forms a ball.
Roll dough into small balls, dip in egg whites then in coconut. Place on prepared cookie sheet and press in the center of each cookie with your finger to make a well in the center.
Bake for 10-14 minutes, just until the cookie and the coconut are slightly browned.
Press the center of the cookies again for the well for the jam. Cool on cookie rack.
Using a teaspoon, place a small amount of jam in the center of each cookie.
Enjoy!

Notes
You could also roll in finely chopped nuts instead of the coconut.
