Ingredients

- 1 lb. boneless, skinless chicken breast, sliced into strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 to 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon coriander
- 1/2 teaspoon paprika (or smoked paprika)
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper

Preparation
Step 1
Preheat the oven to 375 degrees. Combine the first 5 ingredients (chicken through garlic) in a large bowl. In a small bowl, combine the remaining ingredients. Scatter the spice mixture over the chicken and veggies and toss to coat. Transfer to a 9-by-11-inch baking dish. Bake for 20 minutes (or until the chicken is cooked through) and serve.
