Whoopie Pies

Ingredients

• 1 1/3 c. shortening
• 1 1/2 c. sugar
• 2 eggs
• 2 tsp. vanilla
• 4 1/2 c. flour
• 2 c. nestles quick
• 2 tsp. salt
• 1 tsp. baking soda
• 2 c. milk
• Filling
• 3/4 c. oleo
• 2 c. powdered sugar
• 2 c. marshmallow cream

Preparation

Step 1

Cream together shortening and sugar beat in eggs and vanilla. sift together flour, quick, salt and soda. Stir dry ingredients into creamed mixture alternately with milk. Drop by tsp. on greased cookie sheet and bake 400 degrees for 8 minutes. Let stand on cookie sheet 2 or 3 minutes before removing.

Marshmallow Filling:
Cream together oleo and powdered sugar stir in marshmallow cream till well blended.

Put filling in between two chocolate sides like a sandwich and store in Tupperware in the fridge until ready to serve.
