Lemon Poppy Seed Muffins (Elaine)

Ingredients

• 3 Tbsp poppy seeds
• 1 package lemon cake mix
• 1 package instant lemon pudding mix
• 1 cup water
• 1/3 cup crisco oil
• 4 eggs
• Grated rind of whole lemon
• Icing
• 1 cup icing sugar
• 2 tbsp lemon juice

Preparation

Step 1

Mix all ingredients and beat until well blended


Stir in poppy seeds

Bake @ 350 for 40-50 min (2 loaf tins) or 20 mins for muffins

Apply glaze when cake still warm.
