Ingredients

  • 16 oz. sour cream
  • 3 oz. Parmesan cheese, shredded
  • 14 oz. can artichoke hearts drained, rinsed and chopped
  • 10 oz pkg. chopped spinach- thaw and drain well
  • 2 cloves garlic
  • 6 oz. Monterey jack cheese shredded

Preparation

Step 1

Put artichokes, spinach and garlic in food processor and blend until pasty.

Combine sour cream, 2 ounces Parmesan cheese in a casserole dish. Stir in spinach and artichokes. Mix well. Cover top with Monterrey jack and Parmesan cheese.

Bake for 15 minutes at 400 degrees and then broil for about 5 minutes. Serve with tortilla chips and salsa.

You may want to 1/2 recipe if you are making it for less than 6 people.
