Ingredients

  • Frosting:
  • 1 2/3 c. flour
  • 1/2 c. sugar
  • 1 tsp. baking soda
  • 1/8 tsp. baking powder
  • 1/8 tsp. salt
  • 1 egg
  • 1/2 c. buttermilk
  • 1/3 c. frozen orange juice concentrate, thawed
  • 1/3 c. butter, melted and cooled
  • 1/3 c. walnuts
  • 1/2 c. powdered sugar
  • 1/2 tsp. finely chopped orange peel
  • orange juice to get right consistency

Preparation

Step 1

Combine flour, sugar, baking soda, baking powder and salt. Make a well in the center. In another bowl combine egg, buttermilk, orange juice concentrate and melted butter. Add all at once to flour mixture. Stir just till moistened, batter should be lumpy. Fold in walnuts. Put in cupcake papers – 400 degrees 20 minutes.
