Ingredients

  • 4 boneless skinless chicken breasts
  • 1 large onion, chopped (I use Vidalia)
  • 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
  • 1 cup cheddar cheese
  • 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
  • 1 -15 ounce can whole kernel corn, drained

with cream of chicken because they don’t care for cream of mushroom and that is great, too! Make it your own and tweak these recipes however they work best for your family.

Place your chicken breasts in the bottom of your slow cooker. Chop up onion and toss on the top.

You’ll need to cook your rice before this step. What I like to do is cook my rice the night before and just stick it in the fridge. Then you can dump it in and stir it up and give it a minute or two to get heated. You can also cook your rice soon as you get home, though. It’s still an easy and delicious supper!

Stir all of that up and give it a few minutes to get all heated and warm (this won’t take long)

1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions

Place chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon cream soup over top of that. Cover and cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in cooked rice, corn, and cheese. Stir to combine. Serve hot.

I make this for my husband A LOT. We’ve tweaked the recipe a bit over the numerous times I’ve made it. We substitute a packet of Lipton Onion mix for the onion and add a sprinkle of Italian seasoning. Instead of yellow flavored rice we use white rice (any kind of flavored/colored rice is hard–and expensive–to come by in Hawaii) and it works perfectly! As far as serving size goes, it makes quite a bit but as I grew up cooking for a family of 6 and now am married to a soldier, it’s hard to say just how much. I try to go by how many chicken breasts I use as a serving guide. Delicious. When people ask for the the recipe, I point them in this direction!

Hello, 4 chicken breast seems like a lot of chicken. .how many lbs or ounces would you say it is equal to? I don’t want too much chicken and not enough rice & corn! Looks good can’t wait to make this! Thanks!!

I made this today with 5 medium sized chicken breasts and the proportions were very good. The chicken cooks up very tender and when you start stirring the rest of the stuff in, the chicken just shreds itself and mixes up with everything very well.

Does anyone have an idea of how many servings this makes if you follow the recipe exactly? I’ve been trying to watch what I eat lately and log basically everything (crazy dieting womann…I know I am) so it would really help me out! Thanks

Do You Add Water?

I think I’m going to try this. I wonder how it would work with mixed veggies or even broccoli instead of corn (don’t wanna go grocery shopping yet). i think I’ll try the mixed veggies first. I’ll keep you posted…

This is my favorite go to crock pot meal! I add a can of green chiles when I add the corn and cheese and it is relish!

Just made this! Used fiesta mix cheese and tastes great! To make it even easier I put the Zatarain rice in a rice cooker! Can’t wait for my husband to get home and try it!

Does anyone know if this freezes well after it’s cooked? I like to make things that I can separate into individual servings for lunch at work.

About how many servings does this make?

Trying this tonight, I am putting one onion and a package of Onion seasoning. Also I am using a spicy cheese in addition to Cheddar cheese. Hope it turns out great….

This is so so yummy! Never used a crockpot until I just tried this and I’m so glad I did… Added a little extra cream of chicken and cheese as my fiancé and I are cheese fanatics! Will definitely recommend this to others and I will be making this atleast every other week

So glad you liked it Sara! You can break up the chicken or leave it whole, whichever you prefer. I find that it is so tender by the time it is done that when I stir in my corn and cheese, it just breaks up into perfect pieces.

It may depend on the brand of soup you use as well. I’d try low sodium soup before plain rice, because that Zatarain’s brand yellow rice has all the seasonings and flavor that makes this dish so yummy

Okay made this today and it turned out great…only problem I had was it seemed a little thick. I’m gone for about 10 hours so my crockpot switched to warm after 8 hours…think this could be why. I heated up a little chicken broth and threw that in and it was fine. My 6 year old LOVED it!

I skip the onions as my girls don’t like them and throw all in at once, except the cheese. Pour chicken broth on top and it’s incredibly moist and flavorful! My husband is in the food business and this is one of my few meals that he offers NO suggestions on!

Thank you for sharing. We ate this today. I put frozen chicken, onion and soup in the crockpot last night and into the fridge. This morning I turned it on before work. I used Knorr Lipton chicken rice because I didn’t have the other brand. It was excellent and really easy. My 2 year old and meat-and-potatoes husband both liked it. Next time I will try it with frozen mixed veggies instead of just the corn

Is the chicken supposed to be drained before adding all the other ingredients? There was a lot of liquid in my crockpot after cooking it.
