Ingredients
- 4 boneless, skinless chicken breasts
- 3 cans Great Northern white beans
- 1 med. onion, chopped
- 2 tsp. ground cumin
- 1 tsp. oregano
- Pinch cayenne pepper
- 2 (14 oz.) can chicken broth
- 1 cup salsa
- 1 can green chilies
- 2 cans Ro-Tel tomatoes
- 1 can chopped tomatoes
- 1 cup sour cream
- Monterey Jack cheese
- 1 c. salsa

Preparation
Step 1
Cook chicken and then dice. Meanwhile, saute onion for about 4 minutes in pot. Add cooked, diced chicken to onion. Add white beans, cumin, oregano, cayenne pepper, chicken broth, salsa, Ro-Tel tomatoes, green chilies and chopped tomatoes. Bring to a boil, reduce heat and simmer 1 hour, stirring occasionally.
Serve with sour cream and Monterey Jack cheese.
