Ingredients
- 6 pt. of ground cucumber, do not peel - 12 c.
- 2 green peppers ground
- small jar pimiento diced
- 6-8 med. onions ground
- 1/2 cup pickling salt
- 1 pt. dark vinegar
- 1 tbsp. turmeric
- 1 tbsp. mustard seed
- 1 tbsp. celery seed
- 5 c. sugar
- 1 tbsp. corn starch

Step 1
Put cucumbers, green pepper, pimento and onion in crock or enamel kettle - cover with boiling water and prickling salt. Let stand 2 hours then drain. Add in dark vinegar, turmeric, mustard seed, celery seed and sugar. Cook 20 minutes. Add cornstarch mixed with cold water. Simmer another 10 minutes. Pack in jars and seal. Makes 7 pints.
