Cranberry Apple Casserole

You may have to adjust the sugar a little in this recipe. My recipe features a reduced amount of sugar - the original one was way too sweet.

Ingredients
- 1 cup fresh whole cranberries (can be frozen)
- 2 cups apples - chopped & unpeeled (I used Honey Crisp but Granny Smith ok)
- 1/3 cup white sugar
- Vanilla (to taste - I added about 2 Tbsp.)
- 3/4 stick butter - melted
- 1 cup oatmeal
- 1/2 cup brown sugar (you may want to reduce amount to 1/3 cup)
- 1/2 cup chopped nuts (pecans or walnuts)
- 1/3 to 1/2 cup of Corn starch

Step 1
Place cranberries in a large bowl and set aside.
Core, slice and chop apples - leave skins on. Pieces should be about the size of your thumbnail. Add to cranberries
Add white sugar and corn starch and coat fruit well. Pour into an 8 x 8 inch pan or casserole dish.
In a separate bowl, combine chopped nuts, brown sugar (you may want to cut down on amount of brown sugar), oatmeal and melted butter. Mix well then dribble evenly over top of fruit mixture.
Bake at 325 degrees for approximately 1 hour or until apples are tender.
Serve either plain or with a scoop of ice cream on top.
