Date Pinwheels Cookies

Ingredients
- Filling:
- 1 c. white sugar
- 1 c. brown sugar
- 1 c. shortening (1/2 c. butter and 1/2 c. Crisco)
- 3 eggs well beaten
- 1 tsp. vanilla
- 4 c. flour
- scant tsp soda
- salt
- 1 lb. dates
- 1/2 c. sugar
- 1/2 c. water
- Pecans or walnuts -Optional

Step 1
In a sauce pan combine dates, sugar and water. Bring date mixture to a boil while mashing with a potato masher as you cook. Reduce heat and let simmer for about 10 minutes or until thick.
In a mixing bowl cream shortening, sugars and eggs until light and fluffy- add vanilla and blend again. In a seperate bowl, combine flour, baking soda, salt and add to creamed mixture. Beat until just blended. Wrap in waxed paper and chill until dough is easy to handle.
Roll dough into a rectangle about 1/2" thick.
Spread cooled filling over dough and roll up jelly roll style. Wrap in Saran Wrap and put in freezer overnight.
Cut roll into 1/4" slices and bake at 350 degrees for 10-12 minutes.
