Ingredients
- 1 package (26.2 ounces) Cake Mix Doctor’s Deep Dark Chocolate Mix or your favorite chocolate cake mix
- 8 tablespoons (1 stick) unsalted butter, melted
- 2 large eggs (1 egg if using a mix less than 20 ounces)
- 1 tablespoon vanilla extract
- 1 cup semisweet chocolate chips
- 1/4 cup confectioners’ sugar

Preparation
Step 1
Place a rack in the center of the oven, and preheat the oven to 350 degrees.
Place the cake mix, melted butter, eggs, and vanilla in a large mixing bowl and blend on low with an electric mixer until ingredients are incorporated. Increase the mixer speed to medium and blend until mixture comes together in a ball. Fold in the chocolate chips.
Pinch off 1-inch pieces of dough and roll into balls with the palms of your hands. Dredge the balls in confectioners’ sugar, and place a couple inches apart on a baking pan.
Place the cookies in the oven, and bake until they are firm but still chewy, 10 to 12 minutes. Remove from the oven, and let the cookies rest on the pan for 2 minutes, then transfer to a rack to cool completely. Repeat with the remaining dough.
Fun variations: Add 1 teaspoon espresso powder to the batter. Or, add ½ teaspoon almond extract or peppermint extract in addition to the vanilla. You can also drizzle these with a confectioners’ sugar glaze – using 1 cup sugar per 2 tablespoons milk or water.
