Apple Nut Bread

Dad would always make this right after we went to pick apples. This and apple pies.

This is for one recipe, I used to make (quadruple the recipe) four at a time and use four loaf pans.

Ingredients

  • Single (Quadruple)
  • 1/2 cup butter (2 cups)
  • 1 cup sugar (4 cups)
  • 2 eggs unbeaten (8 eggs)
  • 1 tsp vanilla (4 tsp)
  • 1 1/2 Tbl dairy sour cream (6 Tbl)
  • 2 cups sifted flour (8 cups)
  • 1 tsp baking powder (4 tsp)
  • 1 tsp baking soda (4 tsp)
  • 1/2 tsp salt (2 tsp)
  • 1 cup or less chopped walnuts (less than 4 cups)
  • 1 cup chopped unpeeled apples (4 cups)

Step 1

Cut butter into sugar with two butter knives slicing against each other. Add eggs one at a time mixing well after each addition. Blend in vanilla & sour cream with a spoon.

In a separate bowl, sift together dry ingredients and add the nuts. Combine this with the wet mixture. Stir in the apples. Dough will be soft and wet but not runny.

Use a 9 x 5 x 3 inch loaf pan. Grease the pan with a light coating of Crisco. Pour/spoon batter into pan and spread with spoon to somewhat level it.

Bake in a 325 oven about one hour. Test with a long toothpick or cake tester when it comes out clean (no wet batter) it is done. It is easy to over cook so start checking around 40 minutes in case oven cooks faster.

Eat hot right away with some butter spread on it! Eat cold the next day or you can broil it in the oven.
