My mother-in-law made the best hash ever. So simple and so good. Especially served with hoe cakes. Yummmmmm!

- 1 roast
- 1 onion
- 2 - 3 potatoes

Step 1
Cook beef in an ample supply of water in an electric skillet. As is it cooks, keep removing the fat scum as it rises. When done, remove meat, dice the potatoes and onion, add salt and cook in meat broth until done. While potatoes/onions are cooking, shred the roast with a fork) When the potato mixture is done, add meat and simmer until hot. If it needs thickening, add a small amount of flour with water to thicken. Serve with fried cornbread.
