Ingredients

  • 1 lb. gr. beef (half chuck, half sirloin)
  • 1 c. cottage cheese (I prefer with chives)
  • 1 egg
  • 1/2 c. quick cooking oatmeal
  • 1/4 c. catsup
  • 1 tbsp. coarse mustard
  • 1 tbsp. chopped onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. shredded Parmigiano plus 1/4 cup for topping.

Preparation

Step 1

Combine cottage cheese, egg, oats, catsup, mustard, onion, 1 c. Parmigiano, salt and pepper. Mix lightly with beef only until well-blended (over mixing will make it tough).

Press loosely into 8" square pyrex dish.

Bake in 350° oven for 20 minutes.

Remove from oven and sprinkle1/4 c. Parmigiano cheese on top.

Return to oven and bake 10 min. longer.

Let stand 5 minutes.

Drain before cutting into squares to serve.
