Ingredients
- 2/3 + 1/2 cup ground steel cut oats (or oat flour for finer texture cookie)
- 1/4 tsp. salt (omit for healthier version)
- 1/2 tsp. baking soda
- 4 tbsp. date sugar
- 4 tbsp. date paste
- 1/3 cup macadamia nuts, roughly chopped
- 2 tbsp. 80% vegan dark chocolate chips (sugar free)
- 1 tsp. vanilla essence
- 2 tbsp. raw almond butter
- 2 tbsp. unsweetened plant-based milk

Preparation
Step 1
1. Preheat oven to 380 degrees. Line a cookie sheet with parchment paper and set aside.
2. Place steel cut oats into a high-powered blender and pulse until fairly fine - amount should be measured after blending the oats (or use oat flour).
3. Combine dry ingredients in a bowl. Add in wet ingredients and mix together. Form round balls, flatten and place onto cookie sheet.
4. Bake for 7 minutes in pre-heated oven. Remove from baking tray immediately and place onto cooling rack. Once cooled, store in an airtight container at room temperature.
Note: Using oat flour will allow for a finer texture in final product (as seen in picture) but also raises the glycemic index more.
