Ingredients

  • 2 tbsps. butter (or hard margarine)
  • 2 ½ cups chopped onion
  • ¼ tsp. crushed chilies
  • 2 tbsp. brown sugar, packed
  • 2 tsp. curry powder
  • 1 tsp. ground cumin
  • ¼ tsp. salt
  • 28 oz. can diced tomatoes, drained
  • 2 cups fresh spinach, stems removed, lightly packed, chopped
  • 1 tbsp. lime juice
  • 1 lb. paneer cheese, cut into small cubes

Preparation

Step 1

Melt butter in large frying pan on medium. Add onion and chilies. Cook for 5 minutes, stirring often, until onion is softened. Reduce heat to medium-low.

Add next 4 ingredients. Stir. Cook for 5 to 10 minutes, stirring occasionally, until onion is caramelized. Increase heat to medium.

Add next 3 ingredients. Stir. Cook for 5 minutes, stirring occasionally. Add paneer cheese. Stir. Cook for about 5 minutes longer, until spinach is wilted and some of the liquid has evaporated.

Remove to serving bowl. Serve with naan bread.
