You need a double boiler to make this or if you want half chocolate and half vanilla two double boilers.

  • 4 egg yolks

  • 7 tablespoons cornstarch
  • 8 tablespoons flour

  • 2 tsp baking Powder
  • 2 Tbl of Crisco
  • 3 Eggs
  • 1 tsp vanilla
  • 1/2 stick of butter

Step 1

Prepare pie crust-Mix crust ingredients together and divide in half. Roll out half and line pie plate. Use second half for top.

Beat together the milk and egg yolks. Add 1 cup sugar. Mix the cornstarch and flour together in a cup or small bowl then add a couple of tablespoons at a time mixing after each addition until all mixed in.
If you are making half vanilla and half chocolate split the liquid into the two double boiler pans. For the chocolate add two squares semi sweet chocolate. I just grab two good handfuls of semi sweet chips and throw them in. Cook over medium heat. On electric stove, I used to start at 7 until it started to get hot and then turn down to 5 or 6 depending if one of them got hotter than the other faster. Stir frequently while heating and then constantly once it gets hot so it doesn’t just cook on the bottom. Mom and I had to trial and error this over the years and at the end we would cook it until it just started to get thick and then pour it into the pie. If you let it boil it will be too thick when it cools so cook it by feel. When it starts getting thickened pull it off.

Pour into the pie crust. If you are making half van & choc, you could really use help so two of you are pouring at the same time and same speed. If you have something flat like a small cutting board that fits in the pie plate you can put it lightly in the center (don’t crease the pie dough on bottom too much) and pour against this to keep the flavors separate. Bake on 350 about 25 mins. The crust doesn’t really brown too much. The edge gets a little brown but don’t’ let it get too brown.
