Leftover Mashed Potato Puffs

- 1/3 cup sour cream, plus more for serving
- 1 heaping cup shredded sharp cheddar
- 2 tbsp. grated Parm
- 2 tbsp. chopped chives
- salt and pepper to taste
- 3 cups mashed potatoes

Step 1
Leftover mashed potatoes get a new lease on life thanks to these puffs! They're combined with eggs, sour cream, cheese and chives then baked in a cupcake pan until golden and crusty with creamy middles. They don't taste like leftovers.
Preheat oven to 400 degrees F. Butter 8 - 9 of the wells of a cupcake pan - preferably nonstick.
In a medium mixing bowl whisk the eggs then whisk in the sour cream. Mix in both cheeses and the chives.
Taste the potatoes and season them with salt and pepper if needed. Add them to the bowl and mix well.
I guess I’ll have to makes mashed potatoes, I don’t have any leftovers!
If you have left overs of the left over mashed potato puffs.. can you reheat in the oven? I can see these as a way for me to make them ahead of time for my family (I work swing shift).

Wish me luck as I am trying this with leftover mashed potatoes but made from hungry jack potato flakes. My mom is on dialysis can’t have “real” potatoes but these are ok for her so it’s what we make when she visits. I’ll post back with any triumphs (and disasters if they’re funny…)
Major bummer! I have tried to make these 2xs and all I end up with is a big mess. Mine have stuck and not been completely done in the middle! Any suggestions?
Hi Melissa! If they’re not cooked in the middle you should cook them longer or turn your oven up a little. Make sure you’re greasing the pan real well. You’ll know when they’re cooked because they will pull away from the sides of the pan like a cornbread muffin and be golden brown around the edges. Let them set in the muffin pan for 5 minutes or so before you try to pop them out. I just turned my muffin pan over and they fell right out. Good luck! Hope this helps!
