Ingredients
- 16 New Potatoes, boiled and sliced into bite-sized chunks
- 2 egg yolks
- 1 Tbsp. red wine vinegar
- 1 Tbsp. dijon mustard
- 1-1/2 c. oil
- Juice of 1 lime
- 2 Tbsp. chopped fresh cilantro
- 1/2 Tbsp. minced fresh jalapeno peppers
- 1/2 Tbsp. minced red onion
- 1/2 tsp. cayenne pepper
- 1 clove garlic, minced

Preparation
Step 1
In a blender or food processor, beat egg yolks, mustard, vinegar and lime juice together. Drizzle in oil. To this mayonnaise, add cilantro, peppers, onion, cayenne and garlic. Mix well. Place potatoes in a large bowl. Add mayonnaise mixture and toss to coat. Cool to room temperature. Refrigerate, covered, until ready to serve.
