Ingredients

  • 8 Roma tomates, seeded and finely diced
  • 3 Garlic cloves, minced
  • 5 Tbsp. extra-virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • 3 Tbsp. fresh basil, finely chopped
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 baguette, 2-1/2 to 3 inches in diameter, cut in about 20 1/4-in. slices
  • 3 whole garlic cloves

Preparation

Step 1

In a large bowl, combine tomatoes, minced garlic, olive oil, vinegar, basil, salt and pepper. Stir until well-mixed. Rest at room temperature for 30 minutes. Toast both sides of the bread slices under the broiler until browned. When bread is cool enough to handle, slice whole garlic cloves in half, and rub both sides of bread slices with garlic. Top each slice of bread with a heaping tsp. of the tomato mixture.
