Oatmeal Cake

Ingredients

• 1 stick butter
• 1 cup quick oats
• 1 1/4 cup boiling water
• 1 cup white sugar
• 1 cup brown sugar
• 2 eggs
• 1 1/3 cups flour
• 1 teaspoon soda
• 1 teaspoon cinnamon
• 1/2 teapoon salt
• 1 cup sugar
• 1/2 cup butter
• 1/2 cup buttermilk
• 1/2 cup nuts
• 1/2 teaspoon soda
• 1/2 teaspoon vanilla

Preparation

Step 1

mix together oats, and boiling water
let stand 20 minutes
cream together butter and both sugars
add eggs and beat until smooth
add to oatmeal mixture
stiff flour,soda,cinnamon,and salt together
add to oatmeal mixture and mix well
bake in ungreaded 9 X 13 pan
bake 35 minutes

Icing
combine ingredients in sauce pan over med heat stirring constantly
to soft ball stage
let cool 5 minutes
whip until thick
spread over hot cake
