Christmas Confetti Cookies « Go Bold with Butter 1 Picture

Ingredients

  • 1/2 cup (1 stick) + 2 tablespoons unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup Christmas-colored sprinkles

Preparation

Step 1

Preheat oven to 350°F. Line sheet pan with parchment paper or silicone baking mat.

In the bowl of stand mixer fitted with paddle attachment, or in bowl with hand mixer, beat butter and sugar together on medium high speed until creamy and pale in color, about 3 minutes. Add egg and egg yolk and mix until combined, followed by vanilla.

In separate bowl, combine flour, salt and baking powder. Add to butter mixture and mix until just combined. Add sprinkles.
